Great alternative to mashed potatoes! Low carb and low in calories.
I cut, cleaned, & boiled the head of cauliflower with 1/2 cup of water & some garlic salt until it was fork tender. I drained the cauliflower and put it into a bowl to mash a bit with a fork.
In a blender, I put in the cauliflower, Alfredo sauce, parmesan cheese, & garlic salt (However much parmesan cheese & garlic salt you think would make it taste great) and I pureed it.
Note* I used 1/2 tbs of garlic salt(NOT including what I added in the water) and 1 tbs of parmesan cheese for the mash. I had to stop a few times while pureeing to get my fork in there to fix the mash.
Puree until it’s a nice consistency. Mashed potatoe consistency, I suppose. (:
This recipe makes 4 servings.
Per serving: 8g carbs. 62 calories. 2.5g fat.
